Paleo Sweet Potato and Ground Beef Hash

Recently I've found my workouts to be lacking a little bit of energy. Which is unusual for me.

Going to the gym was kind of like walking through a fog. I wasn't really focused and I wasn't feeling as strong as I usually did. The result was that my workouts were suffering and my results were suffering.

So I started diving back into the research about post workout nutrition and specifically how a paleo athlete should incorporate post workout nutrition.

I know that a lot of you are CrossFit enthusiasts. Some of you are even hardcore CrossFit. I think that's awesome. No matter what type of weight lifting you do it is essential to get your post workout nutrition plan in place if you want to get the best results possible.

It doesn't matter if you are trying to lose weight or gain muscle, your post workout meal is one of the most important meals of the day.

Once I started implementing some of my findings around post workout nutrition my workouts improved dramatically. I'm going to be writing a more in depth post this weekend about the ins and outs of building a comprehensive post workout nutrition plan for an athlete.

Today, I just wanted to share a recipe that I threw together that you can prepare and eat within that magical hour after an intense weight training workout.

To give you some quick background on post workout nutrition for paleo athletes keep these things in mind:

1. You want to get nutrients into your system as quickly as possible after your workout. I call it the "magical hour". Your body is primed and ready for a shot of nutrients. Get something good in your system before the 60 minute window closes.

2. You want to get a good dose of protein and a good dose of carbs. The carbs will act as a mechanism to feed the muscles the nutrients they need to grow, repair and become stronger.

3. Proper post workout nutrition will ensure that your workouts stay top notch. If you get this right you won't feel drained at the gym or lack focus during your workouts.

Magical Hour Paleo Post Workout Sweet Potato and Ground Beef Hash

Prep Time: Approx 10 Minute
Cook Time: Approx 20 Minutes
Serves: 2-3

Ingredients for Magical Hour Paleo Sweet Potato and Ground Beef Hash

2 large sweet potatoes, peeled and chopped
1 lb ground beef (grass fed)
1 tbsp bacon fat
3 tbsp butter or FOC (Fat Of Choice)
1 medium onion, chopped
1 tbsp dried thyme
1/2 tsp of red pepper flakes
4 eggs
2 cups fresh spinach, chopped
salt and pepper to taste

Instructions for Magical Hour Paleo Sweet Potato and Ground Beef Hash

1. In a large skillet over medium-high heat, melt two tbsp of butter with the one tbsp of bacon fat.

2. Add the sweet potatoes to the skillet and then season with the thyme, red pepper flakes, salt and pepper. Cook the potatoes until they are tender and have a golden brown color.

3. In another skillet, cook your ground beef over medium heat for approximately five minutes or until it's browned.

4. Once the potatoes are golden brown add the onions and the browned beef into the skillet. Cook for an additional 4 to 5 minutes.

5. In the skillet you cooked your ground beef with melt another tbsp of butter. Fry your eggs to your liking. I do mine over medium. Yum!

6. Add the chopped spinach into the sweet potatoes and cook until the spinach begins to wilt and then remove from heat. This will only take a minute or two.

7. Dish up the hash and place two fried eggs on top. Enjoy some excellent post workout nutrition.
