Instructions

  1. Saute peppers and onions in a small amount of butter. Add cilantro and parsley, season with salt and pepper. Cook until tender. Reserve.
  2. Combine eggs and cream. Mix well and reserve.
  3. Heat a non-stick omelette or egg pan over medium heat. Portion beaten egg into pan.
  4. Stir in sauteed pepper and onion. Cook until set.
  5. Flip omelette and cook until done. Add sliced avocado and top with cheese.
  6. Fold omelette and serve.
  7. Repeat to make 4 omelettes.
