Instructions

  1. Preheat the oven to 350º.
  2. Line a loaf pan with parchment paper or grease with butter.
  3. In a large bowl, mash the bananas with a potato masher or a large whisk. Mash them up really well.
  4. Whisk in the butter, eggs and vanilla, combining very well.
  5. In a medium bowl, whisk together the remaining dry ingredients, except the pecans. Make sure you break up all the flours (coconut flour tends to be especially clumpy).
  6. Stir the dry ingredients into the wet ingredients with a rubber spatula to combine.
  7. Stir in the pecans.
  8. Pour the batter into the pan and bake for 55 minutes, until golden brown and an inserted toothpick comes out clean.
