Instructions

First I made mango fruit leather. 1 mango 1 cup of mango nectar and or fresh squeezed orange juice and 3/4 cup of dried apricots. Simmer until apricots are soaked and you can mash them with a potato masher and it turns into a purée. I use my dehydrator for about 7-8 hours on 140. Just make sure they are not too sticky to the touch so you can slice them.

Mash avocado and combine all ingredients except beets. Put a dollop or two of crab salad on fruit leather slices and place beets throughout all you need is approximately 3 julienne slices per roll. Roll it up and the stickiness of the roll up keep these closed and is the perfect combination of sweet and spicy!
