Instructions

  1. Turn stovetop on to medium-high.
  2. Apply extra virgin olive oil to the cooking surface.
  3. Season the chicken breast.
  4. Cook the chicken - should take about 6-10 minutes.
  5. Once the chicken is cooked, cut into cubes.
  6. Put three handfuls of spinach in a bowl or travel container.
  7. Add all of the vegetables and sliced almonds.  Slice the avocado and place on top.
  8. If your making this for work, mix balsamic vinegar and extra virgin olive oil in a small container, otherwise, mix together and pour it over the salad.
