Instructions

  1. Combine all ingredients in a medium mixing bowl using an immersion blender. Batter will be quite thin.
  2. Warm butter, oil, or grease in a pan over medium-high heat, and once it’s hot, ladle pancake batter into the pan.
  3. Cook 2-3 minutes, then flip and cook about a minute longer.
  4. Repeat steps 2-3 until all batter is used. Makes 12-14 pancakes.
