Instructions

  1. Preheat oven to 425 degrees. 
  2. Wash chicken thighs and pat dry with a paper towel. Place chicken in a baking dish and drizzle with olive oil, salt and pepper on the top. 
  3. In a bowl mix together water, apple cider vinegar, garlic, herbs, olives and juice, and dates. Pour over chicken. 
  4. Place chicken in the oven for 20 minutes. Turn heat down to 350 and continue to cook for an additional 20 minutes or until juices run clear and the chicken is fully cooked.
