Instructions

  1. In a microwave save mug (larger is better) mash the banana very well. Add egg, coconut milk, lime zest and juice and whisk well with banana. Add dry ingredients and mix well. Microwave for 2-2:30 minutes. Allow to cool before removing from mug, as cake is very moist.
  2. Scoop out a couple of Tbs of coconut cream for topping into a bowl and whisk slightly with a fork or small whisk for a creamy topping!
  3. Garnish with some unsweetened shredded coconut & a lime wedge. Enjoy!
