Instructions

  1. Cook chicken breasts until cooked through. Grilling is an easy option but you may use whatever cooking method you prefer. Allow to cool completely and then cut into half inch dice.
  2. Finely dice half a granny smith apple. Finely chop celery and onion (or shallot if you prefer a lighter onion taste).
  3. Combine salt, pepper, cumin, anise, caraway and mayo. Mix to combine.
  4. Stir together seasoned mayo with dried cranberries, apple, celery, and chicken breast. 
  5. Serve on Paleo Sandwich Bread or wrap in romaine lettuce leaves with tomatoes (optional).
