Instructions

  1. Preheat the oven to 400ºF. 
  2. Peel Green plantains (they do not peel easily see below). Get the plantains peeled by:
    1. cutting off the tops and bottoms
    2. score the peel lengthwise, through to the flesh
    3. use your fingers to pry under the score marks and peel off the…peel
  3. Now cut the plantain in 1/2, width-wise, and then cut into matchsticks (or skip the width-wise cut and just slice ‘em).
  4. Melt your F.O.C. in a medium-sized bowl and toss in the plantains. Coat them well & add a nice pinch of salt.
  5. Spread the plantains out on a baking sheet and pop into the oven.
  6. Let them go until they get crispy on the outside and soft on the inside, about 30 minutes.
  7. Remove from the oven and sprinkle a bit more salt on, if needed.
For the Sauce: 
  1. Puree cilantro, green onions, olive oil and honey in your food processor or blender.
