Instructions

  1. Preheat the oven to 350 degrees F
  2. Chop the peppers, mushrooms and canadian bacon and cook them in a pan with the olive oil until the peppers are soft. Around 3 to 5 minutes.
  3. Grease a 12 muffin tin with the butter
  4. Place an even amount of mushrooms, peppers and canadian bacon into each muffin cup
  5. Beat 12 whole eggs and pour an even amount into each cup. About 1 egg in each one.
  6. Put a bit of moteray jack cheese in each muffin and gently stir it into the eggs. Also stir the veggies a bit so they aren't all on the bottom.
  7. Bake at 350 degrees F until cooked. Approximately 25 minutes.
