Instructions

  1. Season the steaks with salt and pepper.
  2. Heat the oil over medium-high heat and sear the steaks for 4-5 mins on each side, or to
  3. desired done-ness.
  4. Remove the steaks to a plate and cover with foil.
  5. To the drippings, add the garlic and shallot.
  6. Reduce to medium heat and saute the garlic and shallot until lightly browned.
  7. De-glaze the pan with the scotch, swirling it around and breaking up any brown bits from the pan.
  8. Pour the pan sauce over the steaks and serve.
