Instructions

  1. Heat a large skillet over medium heat. Add bacon and cook until crisp, flipping often, about 5 minutes
  2. Remove bacon from pan and set aside on a paper towel covered plate
  3. Add onions to pan and cook in bacon fat until translucent, about 3 minutes
  4. Add shredded sweet potato, zucchini and salsa verde to pan and sprinkle in cumin, chili powder, garlic, salt and pepper. Mix well. Cook until softened, stirring often, about 5 minutes
  5. Add shredded cabbage and cook for an additional 2 minutes, until cabbage has softened
  6. Divide hash evenly between four plates
  7. Spray the same skillet (or a separate one) with cooking spray
  8. Add eggs and cook until scrambled
  9. Top each plate with some of the scrambled egg and a slice of bacon
