  1. In a small bowl combine balsamic vinegar, olive oil, water, salt, honey and onion. Whisk to combine. Set aside.
  2. In a large salad bowl place the watercress, top with blueberries, strawberries and chia seeds (if using).
  3. Drizzle with dressing and gently toss to combine. Serve immediately.
