Seafood Lovers Tilapia Cakes

Instructions

  1. Preheat oven to 350 degrees.
  2. Heat 1tsp coconut oil in saute pan on medium heat.
  3. Add Tilapia filets and cook (covered) until opaque, about 3 minutes per side.
  4. Remove from heat and put into medium-size mixing bowl.
  5. Place pan back on the stove over med heat and add 1tsp coconut oil.
  6. Add red onion and celery and saute until soft. About 4 minutes.
  7. Remove from heat and add to mixing bowl.
  8. Break apart Tilapia with a fork and mix with veggies.
  9. Add  whisked egg, mayo, dijon and seasoning. Mix well.
  10. Sprinkle with 1tsp coconut flour and mix well.
  11. Over parchment paper or greased sheet pan, scoop 1/4c fish mixture onto sheet pan and form cakes.
  12. Bake for 25 minutes.
  13. Makes 6-8 cakes. Let them cool off and enjoy.
