Instructions

  1. Melt the butter in a saucepan and gently fry the onion, garlic, jalapenos and carrots.
  2. In a large mixing bowl mash together the bacon, beef, egg and almond flour. Add in the onion mixture and stir thoroughly til combined.
  3. In a separate bowl, whisk together the tamarind pulp, tomato paste, water, cumin, paprika and black pepper. Add half of this sauce to the meat mixture and stir.
  4. Shape it into a log with your hands and place in a standard 9in loaf tin.
  5. Spread the remaining half of the tomato sauce across the top.
  6. Bake at 350 for 20 minutes then turn the oven up to 400 and bake for a further 30 minutes. Let stand for 10 minutes before serving.
