Instructions

  1. In a deep sauté pan or skillet over medium-high heat, warm the olive oil and sauté the onion, bell pepper and mushroom until soft, 5 minutes.
  2. Add the ground beef, season with oregano, salt and pepper. Cook until browned.
  3. Once the meat is browned, grab the vegetable peeler and peel thin strips of sweet potato into the skillet until you have about 2 large handfuls of strips. Add more sweet potato strips if you prefer.
  4. Pour in the tomato sauce. Mix well, turn the heat down slightly. cover and simmer for 15 minutes. If the sauce seems dry while simmering, add a little water.
  5. Serve topped with fresh herbs.
