Instructions

  1. In a large bowl, beat eggs together
  2. Sift coconut flour into eggs and beat together.  Note: coconut flour often has clumps, which is why it is importat to sift it.
  3. Mix in zucchini, sea salt, and pepper.
  4. Set a large skillet over medium-low heat.  Add coconut oil to coat the bottom of the pan once it is hot.
  5. Spoon the mixture into the pan in 6-inch fritters.
  6. Cook until golden brown.  Flip fritter and continue to cook until outside is golden brown and inside is fully cooked (about 5 minutes per side).
  7. Serve warm or at room temperature.
