We are all busy trying to make a living and crossing off items on our to-do lists. This usually leads to some bad choices come lunch time.
You could go the route that most people go and eat insulin bombing fast food or just pound a cup of coffee and skip lunch all together. But you're smarter than that. You're living a Paleo Lifestyle!
I have a desk job and take care of my clients during the day. I usually enjoy a BIG ASS salad like Mark Sisson makes. I'm fortunate because there is a local place right down the street that has an awesome salad bar. Packing one of these is super easy but sometimes I'm lazy.
Today, I'm working from home and I've got ten things going on at once. Sometimes I'm guilty of just working through lunch (sound familiar?)... but today my body needs some energy, and fast. I pulled out my trusty Magic Bullet and this is what I whipped up.
Paleo Berry Smoothie Recipe to Help You Kick Ass the Rest of the Day
Total Time: 3 Mins.
Paleo Berry Smoothie Ingredients
3/4 cup of full fat coconut milk
1 cup of frozen mixed berries (strawberries, blueberries, raspberries, blackberries)*
1 medium banana
1 handful of fresh baby spinach
1/2 teaspoon of cinnamon
3 tablespoons of water
4-5 ice cubes
*The berries were thawed and partially frozen. You can throw them in the microwave for around a minute if they are completely frozen.
Paleo Berry Smoothie Instructions
1. Throw the ice cubes, banana, cinnamon and coconut milk into the blender and mix until smooth.
2. Add the berries, spinach and water into the blender and mix again until your desired consistency... or smoothness.
3. Enjoy it!
It seems to me that this smoothie would transport well and have a good consistency come lunch. If you have a Magic Bullet you can just use one of the all-in-one containers that comes with it to blend it and then throw a lid on it to take with you to work.
This berry smoothie recipe will really "give you wings". The vitamins and minerals in the berries and spinach have energy boosting effects. The cinnamon keeps your blood sugar in check and the full fat coconut milk will keep you full.
