Take the can of full fat coconut milk and place it in the refrigerator until completely chilled.
When you are ready to make the whipped cream, remove the coconut milk from the fridge.
When you open the can, you will notice that the coconut milk has separated. The cream will have solidified on the top layer. Scoop the thick top layer off and into a mixing bowl. This will become our whipped cream!
Add 1 -2 Tbs of sweetener to your taste and ½ tsp of vanilla.
Mix until soft peaks are formed.
Enjoy with a bowl of fresh fruit or on top of some Paleo chocolate cupcakes! Yum!
