  1. You want a cut that is approximately an inch thick. Bring it to room temperature before cooking.
  2. Put salt and pepper on both sides of the steak.
  3. Turn the oven on to broil. Place your cast iron pan into the oven to heat it up.
  4. Once the pan is hot take it out of the oven. (Make sure to use an oven mitt!)
  5. Put the pan on the stove over high heat.
  6. Put about a tablespoon of ghee or grass-fed butter in the pan to melt.
  7. Put the steak on the cast iron pan and cook for 30 seconds on each side.
  8. Once you've cooked on each side for 30 seconds take the cast iron pan and put it in the oven.
  9. Broil the steak on each side for approximately 3 minutes for a medium steak.
  10. Once you've cooked in on each side take it out of the oven and place it on a cutting board. Cover the steak with foil and let it rest for 5 minutes.
  11. Serve and enjoy!
