Slice off the small ends of the delicata squash and then cut the delicata in half lengthwise.
Scoop out the stringy inside with the seeds (hopefully you are composting!) and then slice each half into thin pieces.
Place a steamer basket into a pot, pour water into pot until it just reaches the bottom of the basket. Boil the water and then place the squash into the basket. Put a lid on the pot and boil for about 5 minutes or until tender.
Whisk the olive oil and vinegar together with the pepper and salt in a medium bowl.
Add in squash and mix together. Then add in cranberries and apricots. Sprinkle with almonds.
